    The little halfling in the pub in Dernholm can apprentice you in most of the thief skills.

    He'll also join you if you want.

    Just an added thought: if you don't get to him early enough in the game (level wise), he leaves, and you'll need to take a different route. It happened to me, that's why I mention it.

    you can join the tieves underground
    and some tieves around the city you can ask them to train you
